Apple Cookies + #SweetenTheSeason

Clearly I'm craving all things Fall. Monday I chatted about our trip to Apple Hill and today I'm sharing how I'm enjoying some of our apples. Although, I love a crisp apple as is sometimes you just have to spruce them up. Enter Walmart, during a recent shopping trip I couldn't pass by the 'holiday bake center' without a few items jumping in my cart. It amazes me how treats always make their way into my cart [HAHA] I guess there's just something in the air at Walmart or maybe it's because everything is so affordable! [i.e., Baker's Semi-Sweet Bar $1.98, Baker's Coconut flake $1.94, and Caramel Bites $3.13]

Anyway, I'm sharing a balanced sweet snack or breakfast - Apple Cookies [apples, nut butter, nuts, chocolate, caramel and coconut flakes]. Can you say YUM!


Yeah, yeah -- I could make fudge [which I will, don't worry], gourmet caramel apples [we'll see] and a variety of other sweet treats, but it's only October and there will be plenty of treats over the next three months. Taking requests now.


Apple Cookies are so easy to make your kids will love them. Plus, they're a better-for-you option verse grabbing ice cream, cake or candy.


Serves 1

1 medium apple [I like granny smith or pink ladies]
2 tablespoons nut butter [ My go-to is almond butter]
Nuts [Pecans or Walnuts]
Coconut flakes [Preferably Baker's]
Chocolate chips [white or semi-sweet; I like to use Baker's]
Caramel [For Drizzling - optional]

If you have a apple corer this is the prefect time to bring it out. If not, you'll want to slice your apple into thin rings. Don't forget to remove the core.

Next, spread your nut butter of choice over one side of the ring.

Lastly top with nuts, coconut flakes, and chocolate. [Optional: If you like to live on the edge drizzle with caramel!]
