Be My Valentine

Happy Feb. 1!

Valentine's Day is 14 days away! Are you ready? My husband and I typically don't exchange gifts. Instead we do something active outside and cook a nice meal at home. No, I don't know what I'm making yet. I've actually been on the hunt for tasty Paleo desserts. Any suggestions?

Anyway, if we were to exchange gifts I pulled together a few things I wouldn't mind the hubby surprising me with. Just going to say it -- this is a pretty random list, but of course it's not complete without a few workout items.

Valentine's day

Yup, random list -- but I think I covered all the bases. Personally I could do without chocolates and would prefer a plant verse flowers. However, that's just me and I might just gift myself a new pair of leggings and a book just because.

Mini Me #GAPStyle

Emerson turned 1 today! Her party is a week away and I'm busy planning. However, some how I got side tracked and sucked into GAP. It's amazing how that happens.

I know all the girl mamas can relate when I say GAP's spring line is on point. Oh, the rompers, cute dresses, bathing suits, etc. I can't help myself from wanting to buy everything!

Manitoba Harvest Hemp Heart Bar Review

I don't know about you, but I'm picky when it comes to protein bars. So whenever I have a chance to taste test a new bar I'll jump at the chance. I've had some bad ones, but then I'm had some good ones. Recently I tested out Manitoba Harvest Hemp Heat Bars - vanilla, chocolate and apple cinnamon.

I tried the above three flavors and while they all tasted fine, Apple Cinnamon was my favorite. Hemp just pairs nicely with fruit [IMO]. This was surprise as I thought it would be my least favorite flavor. Chocolate was a fast second. I could live without the vanilla, but then I'm more a fruit, nut  and chocolate kind of gal. Plus, there's no gross protein powder like taste like some bars have. Give it up for natural ingredients!

To say the hubby was pleased, I brought home treats, would be an understatement Since I've had him eating 100% paleo for the last week he was happy to have a little treat. Originally I was planning to make caramel popcorn, but last week got the best of me so I turned to a no bake treat! Plus, I was looking to make something a bit 'healthier' and filling. Since I love date protein bites I made no bake monster cookie bites! Yup, a play on the very popular Monster Cookies. Please note: monster cookies and bites are not paleo.

You're probably asking, "What about the movie?" Well we channeled are youth and watched Goosebumps! Yes, enter "you know you were a child of the '80s if you..." I can't wait until Emerson is old enough to read Goosebumps!

Now for the real good stuff, Monster Cookie Bites! Warning they are a bit addictive.

Monster Cookie Bites
makes 12


1 1/4 cups old fashioned oats
1/2 cup creamy almond butter [or any nut butter really]
1/4 cup honey
1/3 cup Milk Chocolate M&M’S® Chocolate Candies
1/3 cup mini chocolate chips


Place all the ingredients in a medium bowl. Mix until everything is combined and chocolate pieces are coated with wet ingredients.

Line cookie sheet with parchment paper.

Gently roll mixture into small balls [about 1 inch round].

Place bites on a cookie sheet. Place in fridge for about 10 or until the bites have firmed up a bit.

To store: Place bites in airtight ziplock bag and place in refrigerator or freezer. I suggest making a double batch and freezing half for later.


P.S. Anyone's dog love popcorn? Roxy dog does. Check her creeping in the background. She's just waiting for me to leave so she can get down on some popcorn. #nodice

Wild + One Birthday Ideas

Emerson is turning one on Friday! Needless to say I'm in full planning mode. Her invitations went out a few weeks ago, but I still need to pull the rest of the party details together. We're going with a wild one 'woodland' themed party.

The plan is to keep it minimal and modern. I mean she's only turning one. Think burlap, wood rounds, fun treats and some pink and mint.

Above pretty much sums up what I'm thinking -- various photos form the year. homemade cake, small bites, a cute crown or highchair banner, wild one print outs and a treat for later.... just to mention a few.

As for her outfit [because my sister is concerned] she'll be rocking something sassy. A fur vest might even be involved. Either way I love how timeless the chambray dress and moccasins look.

Regarding her birthday gift we splurged and bought her a new carseat as her birthday/christmas gift. We're practical parents/people. However, we'll probably purchase a couple of new board books and contribute money to her college fund. Yes, girlfriend already as a college fund. It's never too early to start saving!

It's all coming together and we can't wait to celebrate ONE year!

Oh my goodness, Emerson turns one in nine days! I really don't know where the last year went. Her birthday party is set and I've mailed the invites, but it might be time to start working on party details. Until then lets chat about a few items we've loved over the last three months.

PBK My First Anywhere Chair [$89] - I've mentioned this chair before, but Emerson just loves this chair. In the last month she finally learned how to sit in it on her own. Oh and she can get out of it safely.

We've tried other brands, but the Plum Organics Puffs don't upset her tummy like other brands. We also like their pouches as well as Earth's Best and Ella's Kitchen.

Columbia Fleece Bunting [$26 on sale] - We love our bunting suits! This suit is perfect for fall, winter and early spring walks. We even have this down suit for snowy days.

Books - Emerson LOVES being read too. During the day if I'm sitting on the floor she'll bring a book over and sit in my lap. It's the cutest thing ever. We're Going on a Bear Hunt [$6] is a household favorite.

VTech Busy Learners Activity Cube [$15 on sale] - Emerson has a lot of toys, but typically pulls the same toys out of her basket. This cube provides hours of entertainment and learning.

VTech Touch and Swipe Baby Phone [$14 on sale] - Girlfriend always wants to play with our phone, but now she has her own. On a side note, Emerson seems to really like her VTech toys.

Fisher-Price SnugaMonkey [$37] - Emerson absolutely LOVES this baby. It was a Christmas gift from Santa [aka Auntie Brittnay] and she's been carrying it around the house ever since. It's a sleepytime toy. When you push the stomach it glows and play soft tunes.

Nike Kids Free 5 (Infant/Toddler) [$48] - I picked up a pair for $13 at the Nike outlet! Baby shoes are just too cute.

Tommee Tippee Sippee Cup [$7, 2pk] - We've been introducing sippy cups over the last few months and Emerson seems to like these the best.

Burt's Bees 100% Natural Diaper Rash Ointment [$6 on sale] - Hands down the BEST baby butt cream.

Lurong Living 5 week Challenge

Nearly three years ago when I signed up for a 90-day challenge [one year later] I didn't realize how out of shape I was. Of course, I thought I was super healthy but numbers don't lie. Three years and a baby later I'm ready for another challenge. Although, I've lost all the baby weight my goal is to get the best body I can. We're going to Hawaii in four months, eek!

Let's start with some before photos. I don't know about you, but I love a good before and after photo!

I'm just rocking leggings and a sports bra, but I think it's a good before. Don't worry I snapped a few in my bikini for the final comparison. ;)

Weight: 130 lbs, (1/17) Although, the gym scale says 128 lbs ... I'm not sure I believe it.
Height: 5'3"
BMI: I really wish I knew. I'm going to see if I can find someone who knows how to measure BMI. This is what really matters.

-  Drop inches [I'm not worried about the number on the scale. Muscle weighs more than fat]
-  Get back to eating nearly 100% paleo/clean
-  Increase overall strength
-  CORE [enough said]

100% Paleo! Yup, no diary, grains or alcohol. I plan on recapping my meals so stay tune. Interested in what I'm eating? Leave a comment with your email.

Crossfit and Spin... I don't count walking the dog or skiing/snowboarding as a 'workout.' The plan is to workout 7-8 times a week. This means there will be a few double days. How do I make this happen? Workouts usually happen before 7 a.m. If it's a double day I sneak in another after the hubby gets home from work. This also allows for a little one-on-one daddy daughter time. I think it's good for both of them.

There you have it -- another challenge. God, I love a good challenge. I'm an all or nothing person so I can't wait to see my after photos!

It's amazing how fast kids go through gear. Emerson is almost a year and we're already upgrading to a convertible car seat. Our infant car seat was 30/30. While she's not 30 pounds, she's pushing 30 inches. Tomato Avocado Salad + #TeamPizza

Oh football Sunday... let me count the ways I love you. The hubby is a guys guy which mean he loves sports, beer, fishing, camping, etc. Over the years I've learned to embrace and love game day. Maybe not as much as him, but I can't pass up a day of good eats and getting stuff done around the house ;) For example, yesterday while watching football the hubby finished installing all the trim in our living room, kitchen and hallway!

Of course, he worked up an appetite and I whipped up a delicious pizza, side salad and turtle pie. Ok, ok maybe I cheated and picked up a Red Baron Frozen Pizza and Edwards Frozen Pie while browsing Target the other day, but you can't blame me for trying. Red Baron makes game day meals easy.  Plus, right now Target is offering a discount via their Cartwheel app [offer goes live January 17th].

However, I did make a pretty awesome Tomato Avocado Salad.

Tomato Avocado Salad
serves 4-6

1 lb mini heirloom tomatoes
1 cucumber
1/2 medium red onion, sliced
2 avocados, diced
2 tbsp extra virgin olive oil
2 tbsp lemon juice
1/4 cup cilantro, chopped
1 tsp sea salt
1/8 tsp black pepper

Place tomatoes, cucumber, red onion, avocado, and cilantro into a large salad bowl. Top with olive oil, lemon juice, salt and pepper. Toss gently to combine. [Optional: add bacon, jalapeno]

Those of you who know me know I eat super healthy 90% of the time. This way I don't worry about indulging in pizza or pie the other 10% of the time! While I love making pizza sometimes there just isn't enough time. I like Red Baron frozen pizzas for a few reasons -- it's affordable, helps saves time in the kitchen and the crust is always perfect in every bite!

Ok, back to game day. We don't want to forget about the fit games you can play while watching football -- 5 burpees for every flag, 10 push ups for every touchdown, 15 sit-ups for every field goal, etc. You're options are endless and depending on the game you'll get a killer workout.

New Year, New Workout Gear

Sorry, I went M.IA. for a few days -- I pulled a muscle. Not kidding, I managed to pull my pectoral muscle. I was push pressing 105lbs! Yay, but no upper body movements for the next few weeks. Anyway, I'll just sit here, drink my green smoothie and shop. Because shopping makes everything better. Right? I figured why not share some of my favorite workout gear. Gear for actually working out, not lounging around the house or running out for coffee.

New gear always inspires me to hit the gym a little harder. Feel unmotivated to workout? Maybe a new pair of leggings, tank or shoes will do the trick. Yup, I'm talking to all the woman who said they wanted to get in shape this year. This is me telling you to buy a new pair of pants instead of a week worth of lattes. :)

New Year, New Workout Gear

I personally only workout in tank tops. Yup, I have a hard time in shirts, but that's just me. Lately I've been loving my UA and TNF tanks! [UA black, $35/ UA teal, $18/ TNF coral, $25]

During winter months I switch it up between full length leggings and capris. When summer rolls around it's either capris or shorts. Right now I'm loving UA cold gear leggings. Honestly, I could wear them everyday. Typically you'll find me wearing them walking the dog or at Crossfit. These TNF capris are currently my favorite compression tights! The length is perfect, hitting about mid shin. Oh, and they're currently on super sale at REI.

Today, I'm a Nike girl. I finally bought myself a new pair of shoes for Christmas and I can't stop wearing them. Currently I'm rocking the Nike 'Free 5.0' Running Shoe [$110]! Shopping tip: Try and find a Nike Outlet. I purchased mine for $50!

The only brand I'm currently wearing is Moving Comfort! You can purchase a sport bra based off your cup size! Start with this or this one. I've heard great things about the VS sports bras, but haven't tested them yet. Any thoughts?

A few other workout items I can't live without include a gym bag, good hair ties and water bottle.

+  While I don't currently own the Lug Cartwheel Fitness Bag [$114], it's on my list. It definitely covers all my needs with two large cargo pockets, one zip pocket, and a drawstring pouch. These features make it easy to carry my daily gym essentials plus a yoga mat! This bag is perfect from yoga, to spin, to Crossfit.

+ I've owned a few water bottles in my day and right now Lifefactory is high on my list.

Blueberry Muffins + Hamilton Beach Mixer Giveaway!

There's one key kitchen gadget to making tasty muffins -- a mixer. If you're a big baker you'll want a stand mixer, but if you're a beginner cook a hand mixer will do. Or if you're like me you need and use both! Sometimes you just don't need a big stand mixer to get the job done.

Blogger Thoughts
When I first picked up the box I thought "wow, this is so light." Then immediate wasn't sure if it would be heavy duty like my other very popular stand mixer [cough, cough Kitchen Aid]. Here's the thing -- surprisingly it was! Over the last month I've been using this stand mixer for all my baking needs. Cookies, muffins, pizza dough you name it I might have made it.

It mixes ingredients well and the bowl only needs minimal scraping. Hamilton Beach makes baking a no brainer with the cheat sheet on the side of the mixer. This is helpful if you're not sure what attachment or speed to use! Another feature I love is the non-slip suction feet! Because it is so light you one, don't have to worry about breaking your back lifting it and two, know it's securely attached to the counter if you walk away for a second or two. Moms you know what I'm talking about. Oh, I can't forget about the price -- it's only $109.99!!

My husband loves that it's dishwasher safe!

This was a nice upgrade from my old Hamilton Beach hand mixer. I'm loving all the different attachments, power and of course the pulse option! Plus, you can't beat the snap on storage case making it extremely easy to store while keeping everything in one place. Whether you whipping up a batch of brownies or blending mashed potatoes this bad boy it key. At $34.99 it would make a nice housewarming gift.

My brother just moved into a new place guess what I gave him?! This hand mixer.

 Now for some deliciousness I whipped up for breakfast this week, Blueberry Muffins!

Blueberry Muffins 
Makes 12


2/3 cup sugar [plus, 1 tbsp sugar for the top, optional]
1 large egg
1/2 cup avocado oil  [vegetable oil works too]
1/3 cup almond milk
1 tsp vanilla
1 1/4 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup plain greek yogurt [I used raspberry for a little extra flavor]
1 cup blueberries [I used frozen]


Preheat oven to 375ºF. Place 12 muffin liners in cupcake pan.

Using a mixer, combine sugar, egg, oil, milk, and vanilla. Mix until well combined. Add the flour, baking powder and salt. Don’t worry about getting another bowl just add the dry ingredients right on top of the wet ingredients. Mix until smooth. Add greek yogurt and mix until combine. Fold in the blueberries.
