Banana Strawberry Protein Muffins

While I love a sweet treat I eat to fuel my body 99% of the time. With that said I basically make everything from scratch so I know what's in it. You name it I've either made it or have thought about making it. ;) 

Recently Bob's Red Mill sent yours truly some samples of their new protein powders. I know more protein! I'm drowning in protein powder over here. Typically I throw a scoop of protein in my smoothies, but I wanted to try something new. Since Bob's Red Mill is known for their flours, grains, etc. I figured why not bake with it! What?! Crazy town, right?

I have a confession, I've never baked with protein powder until now! Honestly, I'm not sure why it took so long. Either way these muffins are packed with protein and only 100 calories! WHAT?! I know crazy right.

If you follow me on Snapchat [tiarawasner] then you might have seen the awesome care package Bob's Red Mill sent over a few weeks ago.

For this particular recipe I used Bob's Red Mill Protein & Fiber Nutritional Booster. This unique blend is made from pea protein powder, chicory root fiber, psyllium husk powder, chia seeds and beneficial probiotics.

Banana Strawberry Protein Muffins [Adapted from ifoodreal]
Makes 12 Muffins 


2 ripe bananas
1 egg
1/2 cup Greek Yogurt, plain
1/4 cup almond milk, unsweetened
2 tsp pure vanilla extract
1 up whole wheat flour
1/4 cup unbleached flour
1/2 cup Bob's Red Mill Protein & Fiber Nutritional Booster
2 tbsp flax seeds
2 tsp baking powder
1/8 tsp salt
1 cup fresh strawberries, diced
Cooking spray


Preheat oven to 350 F.

Spray muffin baking pan with cooking spray and dust with flour. Set aside. You DO NOT want to use muffin liners.

In a medium bowl mash bananas until smooth. Add egg, Greek yogurt, almond milk and pure vanilla extract. Mix with a fork until well combined.

In another bowl add all dry ingredients: whole wheat flour, protein powder, flax seeds, baking powder and salt. Combine dry ingredients. Add dry ingredients to wet ingredients and mix. Do not overtax!

Fold in strawberries. Use a 1/4 cup to distribute the batter evenly among muffin tin. Bake for 20 minutes. Cool completely before serving.
