Building a Better Lunch | Quinoa Power Bowl

It's not a secret that I'm a self-proclaimed fitness and health nut. I'm often asked how I stay in shape and what I eat. Today I'm going to show you what I'm really eating for lunch. I know, I'm getting cray-cray over here. Maybe it's because it finally snowed in Tahoe.

Let's start with fit goals though. I workout a lot. I'm talking 6-8 times a week over 5-6 days. Plus I really watch what I eat. In order to stay on track, every month I like to set a new goal to work towards. Last month it was 10 unbroken kipping pull-ups which I accomplished with just a few days to spare. This month I'm working on 5 strict pull-ups. In order to reach my goal I know I need to build muscle. This is where what I eat really counts.

It's doesn't matter how much you workout fit bodies are made in the kitchen. Today I'm building a better lunch. Hopefully, I've inspired you to start thinking about what you're eating. Especially with the holidays quickly approaching.

Quinoa Power Bowl
[Serves one]

1/2 cup Prepared quinoa
1/2 cup roasted veggies [I used broccoli, cauliflower & carrots]
1/4-1/2 Avocado, sliced [depending on the size]
1/2 cup shredded chicken [optional]
1 egg fried [Sometimes I like two eggs 1 yolk]
salsa to taste [optional]

Layer all the ingredients [in the above order] and enjoy!

Sometimes I like a little sweet treat with lunch. Today I had goodnessknows® snack squares with my Quinoa Power Bowl. It was just the right about of sweet to curb the craving!

Last week while I was shopping at Walmart, I picked up goodnessknows® snack squares as I waited to check out and immediately enjoy a few squares because I was hungry. I was impressed. Surprising the snack squares held me over until I was able to grab lunch a few hours later.

Available in three flavors, they're perfect on-the-go snacks  -- goodnessknows® Cranberry, Almond, Dark Chocolate; goodnessknows®Apple, Almond & Peanut, Dark Chocolate and Peach & goodnessknows® Cherry, Almond, Dark Chocolate.

In my opinion the Cherry, Almond, Dark Chocolate is the best. Although goodnessknows® snack squares are not a traditional healthy snack they won't derail any fitness goals at only 150 calories a pack. Guess what -- they're now a purse essential. goodnessknows® snack squares remind us that doing a little good for yourself can go a long way. Give yourself a break and enjoy life. Their motto is "goodness to greatness."
