Currently Loving


Can someone tell me where January went because I blinked and it was gone!  Emerson actually turned 3 on Monday and her party is this weekend. I should mention I'm so not prepared as in I'll be making her birthday cake, cookies or cupcakes Friday night... yup, still haven't decided. Mom of the year over here. Most days I feel like I'm barely holding it together, but I got this. She's three so balloons, friends and chocolate will do the trick :)

So NorCal Masters... Yup, what a weekend. I'm still processing it and seriously can't wait for the CrossFit open to start at the end of February. But until then let's talk about what I'm currently loving.

BEST DEALS OF THE WEEK
Because you can't ever have enough workout clothes. NIKE is having a sale on top of a sale! Basically, they are giving you an extra 25% all sales items - no code necessary. BEST MEAL OF THE WEEK
Homemade waffles! Well actually, homemade using Kodiak Pancake & Waffle mix - because it's easy. But last week I bought a waffle maker at Target and I've been loving making waffles in the morning. Yup, traded in the VANS frozen waffles for homemade. Combos include a plain waffle topped with a fried egg and avocado or topped with fruit and honey! So good and filling.

LIFE SIMPLIFIED 
No, I'm not talking about the book, but I've heard great things about it. I'm just talking about spending with intention and a minimalist lifestyle. The last few nights I went through various cabinets in my house. As in I pulled everything out and created a keep, giveaway/donate and throw away piles. Man, it felt good. I actually threw away magazines I haven't looked at for YEARS, boxed up baby sheets, towels, etc. and cleaned out all the toiletries we don't use. You know all those samples, freebies or gifts! Boy, it feels good to open up the hall closet to less clutter and things we'll actually use. Next up, Emerson's closest, the guest room/office and our bedroom! Personally, we're not big fans of stuff so it's easy to declutter. Our housecleaner made out yesterday. I always ask friends and family if they want something before donating or tossing. When was the last time you cleaned out and organized your hall closet, junk drawer, etc?

Ok, I'm stopping at three this week because that's all I have!

2018, The Year You Say Yes to YOUR Health!

When you're pregnant, people always tell you it's going to be different - you won't (fill in the blank) anymore. I was naive and then I become a mom and I understood. When you become a mom your old self-dies and you’re left to navigate this new life. Honestly, there's nothing you can do to prepare yourself for that feeling. Trust, me it doesn't matter how many books you read (for the record I read zero).


Those first 6 months you're in a fog and you're just trying to keep everyone alive. You'll see your single friends and kidless friends doing fun things and you'll feel like you're missing out. Once you get a grip you'll start to venture out and figure out what this new life means to you.

But here's the thing you have to find time for you too. That's why it's ok to say yes to yourself. When you feel like your best self then you'll be the best wife, mom and friend you can be. It took me awhile to learn how to say yes to myself, but I did and I’m happier for it.

In 2017, I learned it was ok to say yes to myself. I said yes to Crossfit and counting Macros. For me my health is important. It wasn't about how I looked physically, but how I felt inside and out. For me working out is a huge stress reliever. When I started counting Macros I didn't realize the impact it would have on my life. While there was a physical change there was an even bigger mental change. Again this has made me a better wife, mom, and friend.

For 2018, the plan is to say Yes to fitness, healthy eats, and fun because life is also about balance. In 2017, I was so focused on food and fitness I almost forgot to have fun along the way.

Saying YES to YOU in 2018 

Schedule "Me" time 
I'm serious. I schedule my workouts into my daily calendar. Why? Because if I don't then they won't happen. After a few weeks of making it happen, it will become a habit and you'll crave that time.

Plan Out Meals 
The best way to stay on track with food is to plan your meals out ahead of time. Every Sunday I plan out 4-5 dishes. I make sure to make enough to have leftovers. Then every night I plan out the next day using the MyFitnessPal app. I do this so I know what I need to eat to hit my macros.

Give Yourself Grace 
Life isn't perfect and neither is health and wellness. There are days I slip up, but instead of letting it derail me I just focus and reset during the next meal or day. As long as you are consistent the occasional slip up isn't going to hurt you.

Find a Support System of Moms 
Personally I have a few. I'm a part of a monthly moms dinner club. This is great for my mental health. Then there’s the group of crossfit like-minded moms I sweat it out with, share healthy dishes with, etc. They keep me coming back for more.


Do what makes YOU Happy! 
You're not being selfish. Trust me. Food among other things makes me happy. Personally, when it comes to food I count macros because I'm able to eat foods I want to eat while achieving my goals. Weekly Favorites


Happy Friday Sunday! Clearly someone forgot to hit publish....ooops that's life.

So, January is almost over. How did that happen? Let's talk all things food. I don't know about you, but I'm still crushing my health and fitness goals from 2017. How are you doing? Remeber it only takes 3 weeks to create a habit. Don't wait for tomorrow start working on those goals today. Remember it's about consistency, not perfection.

Favorite Meal/Treat of the Week
I made the best energy bites! They seriously tasted like a sugar cookie. Blend 1 cup quick oats, 1/2 cup raw cashews, 4 tbsp agave, 1 tbsp PB, 2 tsp vanilla extract and a pinch of salt. Once combine, roll into 12 balls. Store in an airtight container in the fridge for up to 2 weeks or 3-4 months in the freezer. You're welcome!

Best Deal of the Week
Per usual, Target is speaking my love language. All bed & bath items are marked down 30%! Hello, this is the perfect time to swap out those old (and probably gross) bath towels, sheets, etc. We're fans of their sheets and towels... also we've been switching over to white. Because it's just nice to be able to bleach them! Who's with me?

8 Simple Tips to Meal Plan Like a Boss


Hi, Hey, Hello! Warning: Don't read if you're hungry :)


You're here today because you're either curious about what I eat, looking for a meal plan or how to set your week up for sucess. Either way, grab a cup of coffee (I sadly ran out this morning), pen, paper and start taking some notes. In our house, the hubby handles paying all the bills, budgeting, etc. While I on the other hand, handle more the of the day-to-day household chores i.e., meal planning, shopping, etc. BTW -- Check out his annual budget spreadsheet HERE. Yes, he lays out an annual budget. I'll save that for another post.

Back to meal planning. Why do I meal plan? Well, for a few reasons which include: creating healthy nutritious meals, to limit dining out/ordering in, and to save money. One of my goals for 2018 is to cut our food budget in half -- keeping it roughly between $400-$500 a month. It's not because we're hurting for money it's simply because we have lofty financial goals. Besides, I think you would agree to spend $700- $1,000 a month, not including meals out, for 3 people is just ridiculous. Plus, I love challenging myself. Once I have a few months under my belt I'll share my tips and tricks. Right now I'm in the trenches and only have $55 left for January or I'll go over budget. Not a biggy, but I'm trying hard to stay under $500!

I've always loosely meal planned, but as of January first things got serious. As in I was actually paying attention to how much I was spending. And no we're not doing the envelope system. While some people need that we don't. We like the cash back on our card, plus we pay off our credit cards in FULL every month - yes every month! We have zero debt aside from our house and my car... that's for another post. Back to meal planning.... how do you become a Meal Planning Machine/Boss? Simple, make a plan, write it down and stick to it :)


7 Simple Tips to Meal Plan/Prep Like a Boss

1. Once a week take an inventory of your fridge and pantry. I like to do this Saturday night because I typically shop on Sunday for the week.

2. Think about what you could make using what you already have. We keep our freezer stocked with meat and fish. Plan your meals around what you have first then dive into Pinterest or a cookbook for additional ideas.

3. Decide on 3-4 meals, but make sure they are big enough to provide leftovers for the days you aren't cooking.

4. Yes, you need to eat leftovers. This will help cut spending and you don't have to cook dinner every night.

5. Think about the staples you need to the week. i.e., coffee, milk, fresh fruit, snacks, etc.

6. Don't forget about breakfast and lunch. Every Monday I cook the hubby a frittata for the week. It's super easy and makes breakfast effortless. He doesn't get bored because we constantly switch up the combinations, which are endless.

7. Prep what you can Sunday night. For example, we eat a ton of potatoes so I'll chop them all Sunday so all I have to do is add spices and oil before roasting.

8. Think about using your slow cooker once a week. A few examples include pulled chicken/pork, soup, chili, bread, etc.

New Year, New Fitness Gear

Gals it's still January so I think I'm safe with the title. Am I right?! How are those fitness goals shaping up? Anyway...

I'm not going to lie, but I pretty much live in workout gear - See Christmas day photo below. Don't worry I ended up changing later for dinner.


I don't even know why I own a closet full of clothes. It's partly because I workout more than I should admit and partly because I work from home. Which makes it totally appropriate to wear yoga pants to work. And you best believe I do. It's totally worth it to invest in fitness apparel and gear.

Trust me I don't want to rock seethrough pants to the GYM. Here's the thing, I rotate out pants, tanks, and sports bras often. I update my shoes 1-2 times a year and I always spend gift cards on workout clothes.

So where do I shop for fitness gear and apparel? Everywhere. I love Nordstroms for everything Nike and Zella, Lululemon for shorts and sports bras, Athleta for tops, leggings and sports bras and GAP for tanks - I fricking love their tanks! Regarding shoes, I'm a New Balance and Nike girl when it comes to non-CrossFit shoes and typically just seek out the best price.

For gear, well, Amazon is my go-to one-stop shop -- water bottles, food scale, etc.

Easy Homemade Coconut Almond Cranberry Granola

Hey friends! I'm sorry if I'm becoming a bit crunchy, but things are just better homemade. It's not always cheaper to make things from scratch, but sometimes it's worth the energy, health benefits and taste. Especially because you have control over the ingredients so ultimately it's better for you, am I right?!



Those of you who follow along on Instagram know I love me some granola. As in, I eat granola every damn day. It's actually one of the first things I enter into the My Fitness Pal app - Granola, Fruit, nonfat Greek Yogurt, and honey to be exact. It's one of my favorite post-dinner snacks. Not only is it filling, but it curbs the munchies and sweet tooth.

Last weekend I was running low on granola and since I had already gone to the store I figured why not just try and make my own. I mean how hard could it really be? After doing a bit of research and taking a quick inventory of my pantry, I came up with this winning combo - Coconut Almond Cranberry. It's not super sweet but has enough flavor and crunch to make this gal very happy -- especially for her first attempt. I know my granola making skills and combinations will only get better from here.



Coconut Almond Cranberry Granola
Makes 26.5 Servings (serving size is roughly 30g)

Ingredients
4 cups rolls oats
1 tbsp cinnamon
1 cup almonds (I used whole, but sliced would work too)
1/2 cups craisins
1 cup sweetened coconut flakes
1.5 tsp vanilla extract
1/4 cup unsalted butter, melted
1/4 cup Wholesome Blue Agave Syrup
92 g egg whites or egg whites from two large eggs
Pinch of salt

Directions
Preheat oven to 280F. If you want really clumpy granola I've heard you should line a large baking tray with parchment paper - I did not do this. 

Combine all the ingredients, except the egg whites, in a large bowl. Whisk egg whites until foamy - then combine with other blended ingredients. 

Spread granola on greased/lined baking sheet and bake for 45 minutes until golden. Do not stir, just let it bake. 

Check at about 35 minutes. Then turn the oven off, open the oven door open a bit, and let the granola cool 10-15 minutes. Remove from oven and let it continue to cool. Once cool, break into clusters. 

Store in an airtight container.

New Year, New Friday Favorites

Happy 2018! There's just something about a new year. The feeling of a fresh start, clean slate, etc. just gets me all jazzed. I'm not big on resolutions, but I do like to create mini goals for myself throughout the year. It's hard to pick a word, but if I had to it would be more of a phrase -- Be Present. Emerson is growing up so fast and I feel like I'm pulled in different directions all the time that I sometimes I don't give her my undivided attention. We don't plan to have any more kids so there's that.

FAVORITE DISH OF THE WEEK
Chocolate Chip Cookie Dough Hummus (pictured above)! Ok - I know it sounds odd, but trust me it was so good I made it twice in one weekend. Whether you eat by the spoonful or with sliced apples it's a snack that's sure to be a crowd pleaser.

Technically, I'm working on not spending anything but my Athleta purchase from last weekend arrived this week! That counts right. Did you buy anything during the Athleta Semi-Annual Sale? I ended up buying this hat, a tank, and these pants and only paid $10 because I had GAP rewards!

3 Alternative Ways to Use Protein Powder

Hi, let me introduce myself. My name is Tiara and I'm the coffee drinking, CrossFitting, macro counting mama behind A Happy Healthy Home. While there's more to me than that - it's pretty much me in a nutshell. 

When I first started counting macros I struggled to hit my daily protein number. Carbs and fats were easy and I just like I had to learn how to eat and make everything fit. I was a hot mess those first two weeks, but 6 months later I feel like a seasoned pro. 

But let's chat about all things protein for a hot minute.


If you're like me the idea of eating more meat doesn't sound appealing. Nor does a daily protein shake. This mama can't just throw protein powder into a shaker bottle and down it. NO, thank you.

I'm the type who needs it blended in her Vitamix and doctored up with spinach, frozen berries, ice, etc. Yup, I like it ice cold. But then there are days that doesn't even sound good so I've learned how to get creative. Basically, I sneak protein powder into everyday food. You're probably thinking I'm crazy, but you're welcome. Trust me you'll thank me later.


All protein isn't created equal and you might have to try a few before you find one you like. Personally, I prefer plant-based protein, however, within the last year, I've discovered a few Whey protein products I really like. Basically, it comes down to the ingredients and what sits well. So always read the label.

1.) Chocolate Chip Cookie Dough Hummus


Chocolate Chip Cookie Dough Hummus with Collagen Peptides (on sale for $28.89 + 25%)
Makes 16 (2 tbsp) servings -- 14C/2F/4P

Don't knock this one until you try it. While it's good with sliced apple I'm pretty ok just eating it by the spoonful. Yeah, it's that good - in my honest opinion. Collagen is one of those supplements that people love or think it doesn't work. Well, you be your own judge, but I can tell you I've been taking it daily since June and have seen amazing results. So there's that.

Ingredients 

1 can of garbanzo beans, drained and rinsed
1/4 cup cashews
1/4 cup + 2 Tbsp maple syrup
2 tsp vanilla extract
3 tbsp rolled oats
1/4 tsp salt
1/3 cup enjoy life mini chocolate chips
1 scoop Vital Protein Collagen Peptides

Directions 

Place all the ingredients, except the chocolate chips, in a food processor and puree until smooth.

Spoon mixture into a bowl and fold in Chocolate chips. Chill for roughly an hour and serve with sliced apples. You can serve immediately, but it tastes better chilled (IMO).

2.) Power Oatmeal Bars

I'm all for recipes pulling double duty. Yup, this power bar is the ideal grab-and-go breakfast or snack. For breakfast, I say pair it with a hard-boiled egg for a little extra protein, but enjoy as is for an afternoon snack. Next time I might add white chocolate chips, since cranberries and white chocolate pair so well together.

Ingredients 

1 cup Kodiak Cakes mix
1 scoop Amazing Grass Pure Vanilla Protein Superfood
1 ripe banana
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 medium egg
2 tsp vanilla
1 cup brown sugar
2 cups oats
1/4 cup Craisins

Optional: add craisins, raisins or chocolate chips

Directions 

Combine all ingredients, pour into a greased 8×8 baking dish. Bake at 350 until golden brown 20-30 minutes.

I could see myself replacing my toast with this muffin.

Ingredients 

1/4 cup coconut flour
1/8 cup arrowroot flour
1/4 teaspoon sea salt
1/4 tsp baking soda
1.5 tbsp Navitas Organic Matcha Powder (25% off $29.99 for 3oz bag)
1 tbsp Truvia brown sugar blend
1 scoop Vega Coconut Almond Protein Powder
1 Vital Farms medium egg
1/3 cup egg whites
1.5 tbsp maple syrup
1.5 tbsp lemon juice (about a half a lemon)
40 g New Barn unsweetened almond milk
1 tsp vanilla extract
1/4 cup non-fat plain Greek yogurt
1/2 tbsp coconut oil, melted

Directions 

Preheat oven to 350 degrees.

Spray muffin pan with coconut oil or use non-stick liners.

In a small bowl, whisk together salt, baking soda, matcha powder, flour, and sugar.

In a different large bowl, beat the wet ingredients until soft frothy peaks form. Combine the wet and dry ingredients together until a frothy mixture. Pour mixture gently into muffin pan and bake for 20 minutes. Test with a toothpick and cool for before serving.
